ABSOLUTELY NOT! Subtitles are not hardcoded! This is a Matroska file: "The Matroska Multimedia Container is an open standard free container format, a file format that can hold an unlimited number of video, audio, picture, or subtitle tracks in one file." Wikipedia. Your video player software should allow you to hide/show subtitles, and even if you want to get rid of subtitles, there are several easy to use tools to achieve that, just search google.
