  They make excellent soup. Yeah, filled with goodies like salmonella and such. Salmonella adds a certain "edge" to the flavour, but you don;t want too much or it overpowers the subtle turtle taste. Use it sparingly...kinda like saffron.  Use enough Hot Sauce, it tastes just like gumbo! Yes, poo a lot with salmonella or hot sauce, what difference does it make?   They make excellent soup.
